Char Sui Lamb Stir-Fry
Ingredients:
- 300 gm lamb mince

- 450 gm fresh hokkien noodles
- 2 tbsp vegetable oil
- 2 cloves garlic, finely chopped
- 1 medium red capsicum, thinly sliced
- 1 medium carrot, cut into matchsticks
- 120 gm snap peas, trimmed
- 1 bunch baby bok choy, sliced
- ½ cup char sui sauce
- 1½ tbsp soy sauce
Method:
Soak noodles in boiling water in a large heatproof bowl for 2 to 3 minutes. Stir, to separate strands, then drain. Heat oil in a large frying pan or wok. Add mince. Cook and stir, to break up lumps, until browned. Transfer the mince to a heatproof dish. Heat the remaining oil in a wok. Add garlic, capsicum and carrot, stir-fry for 1 minute. Add snap peas and bok-choy, stir fry for another minute. Add noodles, char sui sauce and soy sauce to wok, stir-fry for two minutes, then serve hot.
