Hot Tamale Pie

Hot Tamale Pie 


Ingredients:


Filling:

• 1 kg minced lamb

• 1 onion, minced

• ½ green pepper, minced

• 1 tsp salt

• ¼ tsp pepper

• ¼ tsp basil 

• ¼ tsp thyme

• ¼ tsp tarragon, 

• ¼ tsp cayenne pepper

• 2 tsp chilli powder

• 400 gm can tomatoes


Cornmeal Topping


• 1 cup cornmeal

• 1 tsp salt

• 4 cups of boiling water



Method:


Brown meat, onion and pepper. Add rest of the ingredients and simmer for 3 minutes. Place in greased casserole.

Mix salt in the boiling water. Add cornmeal to the boiled salted water. Stir and let cook until thick for about 8 to 10 minutes. Spoon on to hot tamale pie mixture in casserole. Bake for 30 minutes or until bubbly.
