Well, in this article I will teach you one of my favorite recipes in lamb cooking. It is called Breaded Lamb chops. From the title itself you will know that it will surely involve some bread and of course, your lamb meat. But before going to the process of the recipe, prepare the following ingredients (these ingredients will give you a serving of 4): 8 loin lamb chops, ½ cup seasoned flour, 2 eggs (beaten), 1 cup breadcrumbs, 2 tbsp olive oil, 2 tbsp red currant jelly, 1 ½ cups beef stock (heated), ¼ cup port wine, 1 tbsp cornstarch, 3 tbsp cold water, 1 tbsp chopped fresh parsley, and don’t forget salt and pepper for additional taste. With all the ingredients at hand, you are now ready for making Breaded Lamb Chops. First, preheat oven to 375 degrees farenhieght or 190 degrees Celsius. Since lamb meat is a fatty meat, you can trim excess fat from the lamb chop and scrape about 1 inch of bone clean. Place between 2 sheets of waxed paper; flatten with mallet. Dredge chops in flour, then dip in beaten eggs and coat with breadcrumbs. After you have done preparing the lamb meat, heat oil in a large ovenproof frying pan over medium heat. When hot, add chops and cook 3 minutes. Turn chops over, season and continue cooking 2 minutes. Transfer to oven and continue cooking 6 – 8 minutes; adjust time depending on size and preference. While waiting for the meat to be cooked, you can prepare your currant jelly in a saucepan over medium heat. Pour in beef stock and port wine and mix well. Bring to boil and continue cooking 5 minutes. Dissolve cornstarch in cold water then stir sauce until well incorporated. Add parsley and simmer for 3 minutes over low heat. After that, you may coat cooked lamb chops with the sauce that you have prepared and it is now ready to be served.
