What you need before staring are; 1 ½ cups of water, ¾ lbs dry shallots, (peeled and left whole), 1 tbsp butter, 1 tsp chopped fresh tarragon, ½ cup wine, 1 ¼ cups chicken stock (heated), 1 tbsp cornstarch, 3 tbsp cold water, 1 tsp olive oil, 8 lamb chops (most of fat removed), 1 tsp chopped fresh parsley, a rind of ¼ orange, in julienne, and don’t forget the salt and pepper for additional taste. These ingredients will make you a serving of 4. Now with all the ingredients set and ready, let us proceed in the cooking process. First, you pour 1 ½ cups of water in the saucepan then set it over medium heat. You can add salt and let it boil. Add shallots and cook 8 minutes. Remove from the source of heat and drain well. After that, you will return the shallots to the saucepan. Place some butter, tarragon and orange rind. Heat it for about 2 minutes in high temperature. You can now add wind and cook it for another 2 minutes. Add the chicken stock and bring to boil. Reduce the temperature of the heat to low and cook for 3 minutes. After that, dissolve the cornstarch in cold water and you may incorporate sauce into it. Season and simmer sauce over low heat during preparation of the lamb. Heat oil in frying pan over medium heat. Then add the lamb chops and cook for 3 minutes. Don’t forget to turn chops over, season, and continue cooking for 3 minutes. If you have prepared chops that are very thick, you may add 2 minutes more in cooking. Check the cooked lamb chops with a meat temperature to ensure right cook of lamb meat then serve lamb with shallot sauce that you have prepared earlier. You may then sprinkle it with parsley and serve with a smile.
