Italian Lamb Manicotti


Ingredients:


• 250 gm ground lamb

• 1/3 cup onion, minced 

• ¼ cup green pepper, chopped

• 4 tbsp tomato paste

• 2 cups of water

• 1  tsp Italian seasoning

• 8 Manicotti shells

• 1 cup Ricotta cheese

• 700 gm Mozzarella cheese, shredded

• 1 tsp sugar

• Salt and pepper to taste



Method:


Sauté the ground lamb, onion and green pepper. Drain off fat. Add tomato paste, water, salt, pepper, sugar and Italian seasoning. Simmer for about 1 hour. Parboil manicotti shells in salted water for 4 minutes. Drain and dry on paper towels. Combine Ricotta and Mozzarella cheese and fill shells, also adding the meat mixture, using a small spoon. Place shells in a shallow baking dish. Coat with cheese sauce, cover and bake, in an oven for 20 minutes. Remove cover and bake for another 10 minutes. Serve hot.
