Lamb Lion Fillet Pasta Salad
Ingredients:
- 250 gm lamb loin fillets

- 375 gm penne pasta
- Olive oil
- 100 gm baby spinach leaves
- 150 gm pitted olives
- 250 gm cherry tomatoes, halved
- 1 small red onion, cut into thin wedges
- ¼ cup French salad dressing
- 4 to 5 broccoli florets, steamed
Salt and pepper to taste
Method: Bring a large pan of salted water to boil, and cook the pasta until tender. Drain and set aside. Lightly brush the lamb with a little oil, salt and pepper. Heat a fry pan, on moderate heat and fry lamb for 4 to 5 minutes, on each side until golden brown, or cooked according to your liking. Remove from heat, cover and leave to rest for 5 minutes. Slice diagonally. Place pasta in a large bowl and stir in spinach, broccoli, olives, tomatoes, onion, salad dressing and sliced lamb. Serve hot.
