Lamb Skewers with Herbed Yogurt

Lamb Skewers with Herbed Yogurt


Ingredients:


  • 300 gm lamb, diced, cut into 3cm cubes
  • 2½ cup plain yogurt
  • 2 spring onions, finely chopped
  • 1 tsp garam masala
  • 1 tsp fresh ginger, grated
  • 1 garlic clove, crushed
  • ½ tsp ground turmeric
  • ½ tsp chilli powder
  • 15 mint leaves, finely chopped
  • 1 bunch of chives, finely chopped
  • Baby leaf salad, to serve
  • 1 green capsicum to serve
  • Salt to taste


Method: Spoon 4 tablespoons of the yogurt into a bowl. Add the spring onions, garam masala, ginger, garlic, turmeric and chilli powder. Add lamb and mix well until all the cubes are well coated. Cover and refrigerate overnight. Soak 8 wooden skewers in cold water. Thread the lamb into the skewers and cook on a hot barbecue grill plate or char grill pan for 4 minutes on each side, or until cooked to your liking. Remove from heat and season with sea-salt. Mix the remaining yogurt with the mint and chives. Serve with herbed yogurt, grilled green capsicum and baby leaf salad.
