Lamb Steaks with Chilli, Orange and Redcurrants
Ingredients:
- 4 lamb leg steaks

- Grated Zest and juice of 2 oranges
- 1 tbsp olive oil, and extra olive oil for frying
- 1 tbsp balsamic vinegar
- 1 fresh red chilli, deseeded and chopped
- Handful of coriander, chopped
- 150 ml chicken stock
- 1 tbsp redcurrant jelly
- 2 tbsp fresh or frozen redcurrants
Salt and pepper
Method: Mix together orange zest and juice, olive oil, vinegar, chilli and coriander. Pour over the lamb steaks. Cover and marinate overnight. Drain the meat, reserving the marinade. Season the meat with salt and pepper. Mix the marinade with chicken stock. Heat a heavy based fry pan, put some oil, and fry meat on both sides until dark brown and tender. Transfer to a dish and keep warm. Pour the stock and marinade into the frying pan. Allow to sizzle and keep on stirring. Boil, until reduced by half. Add redcurrant jelly and continue to boil until shiny and syrupy. Serve the lamb steaks with a little sauce poured over. Decorate with redcurrants.
