Scottish Lamb Rack Roast
Ingredients:
- 2 Racks of lamb, trimmed
- 50 gm butter
- 2 tbsp olive oil
- 1 onion, finely chopped
- 1 clove garlic, finely chopped
- 1 ½ cup breadcrumbs
- 2 tbsp finely chopped parsley, chives and tarragon
- Salt and pepper to taste
Method:
Melt butter in a frying pan. Add onion and fry till soft for 5 to 6 minutes. Add garlic and cook for 1 minute. Add breadcrumbs, salt, pepper and chopped herbs. Mix them together. Take a roasting tray and lay the lamb racks flat. Spoon over the herb mixture. Roast in the oven at 180°C to 200°C for 30 minutes or when lamb cooked according to your liking. Serve hot with steamed vegetables of your choice.
