Shahjani Lamb Korma


Ingredients:


  • 1½ kg boneless lamb pieces
  • 6 cups yogurt
  • 2 onions
  • Garam masala
  • Poppy seeds
  • Oil
  • 1½ inch ginger
  • 10 cloves garlic
  • ½ coconut, coarsely chopped
  • 12 almonds, chopped
  • 12 pistachios
  • 4 dried apricots
  • ½ tsp cumin seeds
  • A pinch of saffron
  • Turmeric powder
  • Salt to taste


Method: Grind ginger, garlic, dry apricot, coconut, almonds and pistachios to a paste. Add turmeric powder, salt, chilli powder, yogurt and mix well. Add ground masala with lamb pieces. Cover and marinate for 3 hours. Chop 2 medium sized onions. Put oil in a pan and fry onions till golden brown. Add marinated meat. When the liquid begins to boil, add garam masala, cover and cook until meat is tender. Add saffron. Garnish with coriander or cashew nuts. Serve with hot rice.
